My Version of Mom’s Ham Salad

I’m laughing just typing this, but I am serious when I write that my Mom would grind up just about anything to make a sandwich spread…bologna, left over ham, chicken and even…spam! In the summer she served garden fresh tomatoes as toppers for these mixed spreads and potato chips (which to a kid was the best part of the meal lol) Of course the purpose to making sandwich spreads is to use left overs and or to feed a bunch for cheap!
I used Mom’s grinder for the leftover Easter dinner ham. I will say that while it was a fun, sweet memory and definitely blog worthy I will keep that grinder more for decoration and use my food processor as the parts don’t get rusty!
Oh if Mom could of joined me for a sandwich, what a laugh we’d of had……as she bragged with a wink, how her recipe was much tastier than mine ….hee hee.

 

Here’s what I had:

leftover ham: bout 6 cups cubed
Sweet pickles: bout 2 cups
hard boiled eggs: 8 (we love eggs)
Dill pickles: bout a cup
Onion: not fresh chopped cuz I get horrible heartburn but McCormick’s minced onion spice
Mayo: 1/2 cup
Miracle Whip: 1/2 cup

Grind or process meat and pickles, then stir in the mayo!!
This made enough to share; so bout 16 sandwiches!!!
