Stirring The Pot

Rich and Refreshing!

As a child, my mom would make a jello cake but, only in the summer.  I guess because first, we were poor (money poor that is)  and this is a rich dessert, pretty fancy for a cold cake and very refreshing on a hot’n’humid day in the South.   I guess these are the same reasons I now find myself making this cake every summer.

Jello poke cake
1 box cake mix – yellow or white
1 box jello – your favorite flavor
1 carton Cool whip
● Bake cake according to the directions
● fix jello according to the directions
●  using the end of a wooden spoon,  poke holes all over the cake
●  pour the hot jello over the entire cake
●  let cake cool then chill in the refrigerator
●  when cake is cold and ready to serve top with cool whip
■  TIP, only cut the cake a slice at a time to avoid a dry cake
